This book reconstructs that 9000-year story based on the often fragmentary information that we have available. Cheese and Culture embarks on a journey that begins in the Neolithic Age and winds its way through the ensuing centuries to the present. This tour through cheese history intersects with some of the pivotal periods in human prehistory and ancient, classical, medieval, renaissance, and modern history that have shaped western civilization, for these periods also shaped the lives of cheesemakers and the diverse cheeses that they developed. The book offers a useful lens through which to view our twenty-first century attitudes toward cheese that we have inherited from our past, and our attitudes about the food system more broadly. 버몬트 대학교 식품영양학과 교수로 있으며 낙농화학 및 치즈제조학에 관한 수많은 학술논문을 쓰고, 관련 콘퍼런스를 주최했다. 버몬트치즈협의회와 함께 『미국의 농장 치즈American Farmstead Cheese』(2005)를 비롯해 치즈에 관한 여러 책을 공저했다. 치즈 연구와 강의로 국가 치즈 전문가 승인을 받았고, 현재 버몬트 대학교 산하 버몬트아티장치즈협회 공동이사로 있다.
